Tropical Coconut Oil Granola with Mango and Macadamia Nuts

Ingredients

3 cups rolled oats
1 cup unsweetened coconut flakes
1 cup raw macadamia nuts, roughly chopped
1/4 cup chia seeds
1/4 cup melted coconut oil
1/3 cup pure maple syrup
1 tsp vanilla extract
Pinch of sea salt
1 cup dried mango, chopped (preferably unsweetened)

Instructions

  1. Preheat the oven to 325°F (165°C). Line a baking sheet, with parchment paper.
  2. In a bowl, mix together oats, coconut flakes, macadamia nuts and chia seeds.
  3. In a bowl, mix together the melted coconut oil, maple syrup, vanilla extract and a pinch of sea salt.
  4. Pour the mixture over the ingredients and stir well to coat everything evenly.
  5. Spread the mixture out on the baking sheet in a layer.
  6. Bake, for 25-30 minutes stirring every 10 minutes until it turns brown.
  7. Take it out of the oven. Let it cool down completely on the baking sheet.
  8. Once cooled add in the dried mango chunks.
  9. Keep it in a container at room temperature for up to two weeks.
