2 cups of whole wheat pastry flour
1 teaspoon of baking soda
1 teaspoon of baking powder
2 teaspoons of ground cinnamon
1/2 teaspoon of sea salt
2 tablespoons of spirulina powder
2 eggs (or flax eggs for a vegan alternative)
1/2 cup of coconut sugar
1/3 cup of melted coconut oil
1/4 cup of applesauce
1 teaspoon of vanilla extract
2 cups of grated zucchini (approximately from two medium zucchinis)
3/4 cup chopped walnuts
A quarter cup pumpkin seeds

Steps

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a loaf pan either by greasing it with coconut oil or lining it with parchment paper.

  4. In another bowl, beat together the eggs, coconut sugar, melted coconut oil, applesauce and vanilla extract until mixed.
  5. Gently mix the ingredients from the first bowl with the ingredients from the second bowl until just combined, avoid overmixing them.
  6. Carefully fold in the shredded zucchini along with chopped walnuts and pumpkin seeds.
