Superfood Kale and Sweet Potato Hash with Poached Eggs

2 cloves of garlic, minced
A bunch of kale with stems removed and leaves chopped
1 teaspoon of smoked paprika
1/2 teaspoon of ground cumin
Salt and pepper to taste
4 large eggs (organic is preferred)
1 tablespoon of apple cider vinegar (for poaching)
1/4 cup pumpkin seeds (pepitas)
