Ingredients

1 cup sprouted quinoa
1/4 cup chia seeds
1 cup wheat flour
A teaspoon of sea salt
1 cup all purpose flour
1 tablespoon honey
2 teaspoons dry yeast
1 tablespoon honey
1 tablespoon olive oil
A cup of warm water

Instructions

  1. For sprouting quinoa: Soak one cup of quinoa in water for 8 hours or overnight. Rinse. Place in a jar covered with a cloth for 24 hours, rinsing daily until small sprouts emerge.

  4. Work the dough on a floured surface for 10 minutes until it becomes smooth and elastic.
  5. Transfer the dough to a greased bowl, cover it, and allow it to rise in a dark spot for 1 hour.
  6. Preheat the oven to 350°F (175°C).
  7. Shape the dough into a loaf. Put it in a greased 9×5 inch loaf pan.
  8. Bake for 40-45 minutes until the loaf turns brown and sounds hollow when tapped.
  9. Let the bread cool completely before slicing.
