Ingredients

1 cup of dried brown lentils, washed
1 tablespoon of Extra Virgin olive oil
3 cloves of garlic, minced
1 large onion, finely chopped
2 carrots, finely diced
2 celery stalks, finely diced
1 red bell pepper, sliced
1 can (14.5 oz) of diced tomatoes
4 cups of low-sodium vegetable broth
1 teaspoon of ground cumin
1 teaspoon of smoked paprika
A dash of turmeric (about half a teaspoon)
Approximately 4 cups of fresh spinach, roughly chopped
A tablespoon of apple cider vinegar
A quarter cup of freshly chopped cilantro
Salt and pepper to taste

Instructions
