1 cup cooked quinoa (cooled)
1/2 cup almond butter
1/4 cup honey
1/4 cup unsweetened cocoa powder
1/2 cup chopped dried cherries
1/4 cup dark chocolate chips (85% cocoa or higher)
1/4 cup ground flaxseed
1 teaspoon vanilla extract
1/4 teaspoon sea salt

Directions

  1. In a mixing bowl, combine cooked quinoa, almond butter, honey and cocoa powder until mixed.
  2. Add in chopped cherries, chocolate chips, ground flaxseed, vanilla extract and sea salt. Stir well to ensure distribution.
  3. After mixing the ingredients, cover the bowl. Put it in the refrigerator for 30 minutes to allow it to set. Once it’s chilled, shape the mixture into 20 balls, each 1 inch in size. Keep them stored in a container in the fridge for up to a week.
