One-Pot Quinoa and Frozen Spinach Protein Bowl with Lemon Tahini Drizzle

Ingredients

For the bowl

1 cup rinsed quinoa
2 cups low sodium vegetable broth
10 oz spinach
1 can (15 oz) chickpeas, drained and rinsed
1 tbsp extra virgin olive oil
2 cloves garlic, minced
1 tsp ground cumin
Pinch of sea salt (about 1/4 tsp)
Handful of sliced almonds (around 1/4 cup)

For the Lemon Tahini Drizzle

3 tbsp tahini paste
2 tbsp lemon juice
Splash of water ( 1 tbsp)
Small clove of garlic minced
Season with salt, to your liking

Instructions

  1. In a pot, heat up some oil on medium heat.
  2. Throw in the minced garlic and cumin, then stir-fry for a minute.
  3. Next, add the quinoa and vegetable broth. Let it come to a boil then lower the heat and let it simmer with the lid on for 15 minutes.
  4. Toss in the spinach and chickpeas into the pot. Cover it up. Let it cook for a 5 minutes.
  5. While the quinoa mix is cooking, whip up the Lemon Tahini Drizzle by mixing all ingredients in a bowl.
  6. Once the quinoa is done and spinach is thawed, fluff everything with a fork.
  7. Serve by scooping the quinoa mix into four bowls, topping them with sliced almonds and drizzling, with that Lemon Tahini sauce.
