Ingredients
10, oz spinach thawed and squeezed
2 cups plain Greek yogurt (2% fat)
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
1 tbsp extra virgin olive oil
Zest of one lemon
Pinch of sea salt
Pinch of black pepper
Dash of ground nutmeg
For the crostini
1 whole grain baguette, cut into thin rounds
2 tbsp extra virgin olive oil
Salt and pepper to taste
Directions
Preheat oven to 375°F (190°C).
- Remove water from spinach.
- In a mixing bowl, mix together spinach, Greek yogurt, Parmesan, garlic, olive oil, lemon zest, salt, pepper and nutmeg until well combined.
- Transfer the mixture to a baking dish. Bake for 20-25 minutes until it’s heated through and bubbly.
- While the dip is baking, brush baguette slices with olive oil. Sprinkle them with salt and pepper.
- Arrange the slices on a baking sheet. Toast them in the oven for 5-7 minutes until they turn brown.
Serve the dip with grain crostini.
